Here's how to show an egg who's boss without ever turning on your stove. In this Food for Thought Nancy Leson reveals an easy method for poaching eggs in a microwave. I was dubious at first but after seeing the results I'm a believer, too.
You'll also hear me promise to post a foolproof method for perfect hard boiled eggs every time. By "perfect" I mean hard boiled but without that creepy greenish-grey band you sometimes get around the yolk. Here's how.
1. Cover raw eggs with a few inches of cold water in an uncovered pot. 2. Bring to a rolling boil, cover pot, turn off heat and set timer for 10 minutes. 3. When timer goes off, drain pot and plunge eggs into an ice water bath. Let cool for 5-10 minutes and peel.
As I mention in this segment, I've most recently seen this method described in Cook's Illustrated but I've known about and used it for years. Works every time. Got some egg tricks of your own up your sleeve? Share them below.
