Dick Quacks up for Salt-Preserved Duck Eggs

Stein

In addition to being delicious, salty duck eggs offer more than 1,000,000 percent of your USDA daily sodium requirement. And their virtues don't end there.

Salty duck eggs can also produce spectacular gastro-intestinal after-effects—or should that be sound effects? Either way, avoid elevators for at least 24 hours after eating.

Discussing my latest batch of the sodiumized waterfowl fruit, I whined to Nancy that mine came out with yellow yolks instead of the more scenic nuclear orange one sees in the commercial product. I had thought that was due to a weak brine but have since learned that it just needed more rice wine in the mix. Here's the recipe I used.

"I want your eggs!"
